Ingredients
  

  • 1 lb Mixed wild mushrooms e.g., chanterelles, oysters, blewits, cleaned and sliced
  • 2 tablespoons Olive oil
  • 4 cloves Garlic minced
  • 1 tablespoon Fresh thyme leaves
  • 1 tablespoon Fresh parsley chopped
  • Salt and pepper to taste
  • Optional: red pepper flakes for added heat

Instructions
 

Sauté:

  • - Heat olive oil in a skillet over medium heat.
  • - Add minced garlic to the skillet and sauté for 1-2 minutes until fragrant.
  • - Add sliced wild mushrooms to the skillet and sauté for 8-10 minutes, stirring occasionally, until they are golden brown and tender.

Season:

  • - Sprinkle fresh thyme leaves and chopped parsley over the mushrooms, and season with salt and pepper to taste.
  • - For an extra kick, add a pinch of red pepper flakes if desired.
  • - Cook for an additional 1-2 minutes to allow the flavors to meld together.

Garnish and Serve:

  • - Once cooked, transfer the wild mushroom medley to a serving dish and garnish with additional fresh herbs if desired.
  • - Serve hot as a delightful side dish or as a flavorful topping for pasta, rice, or toast.
