Wild Mushroom Zaalouk with Moroccan Spices

Ingredients
  

  • 1 lb Mixed wild mushrooms such as chanterelles, oysters, boletes, blewits, or just whatever you find! cleaned and chopped
  • 1 Large eggplant peeled and diced
  • 2 Tomatoes diced
  • 3 cloves Garlic minced
  • 2 tablespoons Olive oil
  • 1 teaspoon Ground cumin
  • 1/2 teaspoon Paprika
  • 1/2 teaspoon Ground coriander
  • Salt and pepper to taste
  • Fresh cilantro or parsley for garnish

Instructions
 

Roast Eggpant:

  • - Preheat the oven to 400°F (200°C). Place diced eggplant on a baking sheet and drizzle with 1 tablespoon of olive oil. Roast in the preheated oven for 20-25 minutes, or until softened and lightly browned.

Sauté Mushrooms:

  • - While the eggplant is roasting, heat the remaining olive oil in a skillet over medium heat. Add minced garlic and chopped wild mushrooms to the skillet and sauté for 8-10 minutes, or until mushrooms are tender and golden brown.
  • - Add diced tomatoes to the skillet and cook for an additional 5 minutes, stirring occasionally.

Mix:

  • - Once the eggplant is roasted, transfer it to a food processor or blender. Add the cooked mushroom and tomato mixture, ground cumin, paprika, ground coriander, salt, and pepper.
  • - Pulse the mixture until it reaches your desired consistency, smooth or slightly chunky.

Garnish and Serve:

  • - Transfer the zaalouk to a serving bowl and garnish with fresh cilantro or parsley.
  • - Serve the wild mushroom zaalouk warm or at room temperature as a flavorful dip or side dish, alongside crusty bread or crackers.
